When Jumby Bay, A Rosewood Resort unveiled its new Caribbean chic look this last winter, it also introduced a new award-winning chef to this private island paradise!
Executive Chef, Juan Pablo Loza comes to Jumby Bay from Rosewood’s sister property Las Ventanas Al Paraíso, an ultra exclusive resort in Los Cabos, Mexico, and from the moment he arrived he started spicing up Jumby Bay’s cuisine, giving it a unique Latin twist while still honoring popular Caribbean traditions.
This is Chef Loza’s first position outside of Mexico and he says he’s excited and honored to lead Jumby Bay’s culinary team into a new era of excellence. Chef Loza is responsible for all dining operation on the island including menu creations a The Estate House, the NEW Verandah Restaurant, The Veranda Bar and Kitchen and the NEW Pool Grille.
Chef Loza is also overseeing in-suite dining and special events and he’s starting a new Jumby Bay Cooking School.
From early in his career Chef Loza caught the eye of food critics and culinary experts. In 2005, he was award 1st place in the prestigious Best Mexican Young Chef competition, a national contest judging traditional and contemporary cuisine. Born in Mexico City, Chef Loza earned a Bachelor’s Degree in Hotel and Tourism Management in 1998 and before working at Las Ventanas distinguished himself working at some of Mexico City’s most acclaimed restaurants including the famed Restaurant Le Cirque, Restaurant Ciboulette and Restaurant L’Olivier.
Jumby Bay’s $28 million dollar transformation has brought a new vitality and style to the resort’s dining experience and Chef Loza is part of a new era where delicious cuisine takes center stage. Chef Loza excels by combining his mastery of Mexican and Spanish cuisine with Antiguan flare using locally grown spices, produce, and fresh seafood and focusing on healthy way to bring out the best flavor. This new sense of culinary creativity is reflected in new signature dishes like the delicious Lamb Mojito, that’s full flavored with brown sugar, lemon and mint, and the Tropical Shrimp that’s steeped with red chili, pineapple, cilantro and lime.
