Executive Chef, Juan Pablo Loza comes to Jumby Bay Resort from Rosewood’s sister property Las Ventanas Al Paraíso, an ultra exclusive Rosewood Resort in Los Cabos, Mexico, and from the moment he arrived he started jazzing up Jumby Bay’s cuisine, giving it a unique Latin twist while still honoring popular Caribbean traditions.
Chef Loza is responsible for all dining operations on the island including menu creations at The Estate House, the new Verandah Restaurant, The Veranda Bar and Kitchen and the new Pool Grille. Chef Loza will also oversee in-suite dining and special events and he’s starting a new Jumby Bay Cooking School.
Chef Loza excels by combining his mastery of Mexican and Spanish cuisine with Antiguan flare using locally grown spices, produce, and fresh seafood and focusing on healthy way to bring out the best flavor. This new sense of culinary creativity is reflected in new signature dishes like the delicious Lamb Mojito, that’s full flavored with brown sugar, lemon and mint, and the Tropical Shrimp that’s steeped with red chili, pineapple, cilantro and lime.
